Pasta and Vegetable Frittata
Ingredients:
- 2 oz angel hair pasta, broken to 2" pieces
 - 1/4 cup egg substitute
 - 1 tbsp nonfat or 1% milk
 - 1/4 cup low-fat mozzarella cheese grated, divided
 - 1 tbsp Parmesan cheese
 - Pinch of basil
 - Pinch of salt
 - 1 - 13 3/4 oz can artichoke hearts, water packed, sliced
 - 1/4 cup black olives sliced
 - Nonstick vegetable cooking spray
 - 1 tsp vegetable oil
 - 2 tbsp slivered blanched almonds
 
How to Make Pasta and Vegetable Frittata?
    -  Cook angel hair pasta according to directions, without salt or fat. Drain and keep warm
