Pasta and Vegetable Frittata Recipe

Pasta and Vegetable Frittata

Ingredients:

  • 2 oz angel hair pasta, broken to 2" pieces
  • 1/4 cup egg substitute
  • 1 tbsp nonfat or 1% milk
  • 1/4 cup low-fat mozzarella cheese grated, divided
  • 1 tbsp Parmesan cheese
  • Pinch of basil
  • Pinch of salt
  • 1 - 13 3/4 oz can artichoke hearts, water packed, sliced
  • 1/4 cup black olives sliced
  • Nonstick vegetable cooking spray
  • 1 tsp vegetable oil
  • 2 tbsp slivered blanched almonds

How to Make Pasta and Vegetable Frittata?

  • Cook angel hair pasta according to directions, without salt or fat. Drain and keep warm
  • Combine egg substitute, milk, 3 tbsp shredded mozzarella cheese, parmesan cheese, basil, salt, artichoke hearts, and black olives in a bowl
