CRISPY SEMPRONG ORIGINAL (INDONESIAN EGGROLL)

Semprong is a crunchy snack that always tempting my tongue to enjoy them. I like it since I was a kid until now. When I got to enjoy the snack with my kids, I still feel like enjoying semprong with my friends and my brothers in my hometown.

In childhood, I only know how to enjoy and spend a can of Semprong in front of me. Now, when I started to teach my children about how to live a life that filled with colorful favor from Allah SWT and how to grateful. Sometimes I and My wife interested in making Semprong cakes and also enjoying together with my daughters.

Semprong cake making is actually quite easy and simple, but if we are less experienced, it will be very difficult. Sometimes burnt, sometimes soft when it should be crisp. From the recipe books we've read, here's a recipe that I can share.

Ingredients:

3 eggs
150 grams of sugar flour
225 grams of rice flour, sifted
4 tablespoons of sago flour, sifted
175 ml coconut milk from half coconut
4 teaspoons margarine, melted
40 grams of sesame
1/4 teaspoon salt

How to Make:

1. Beat eggs and sugar until thick flour. Add rice flour and sago flour that has been sifted, then stir well.
2. Enter the coconut milk and melted margarine. Stir well. Add sesame seeds and salt. Stir well.
3. Heat Semprong cookie mold. Pour 1 tablespoon of dough into the mold. Cover it with other side of mold. Heat over low heat while inverted until the cake is almost dry.
4. Open mold, then immediately roll with chopsticks or can be set up according to your taste. Let stand until cool and crisp.

Tips:

1. If cooking with fire, more easily if using ember, not flame.
2. There are also molds that use power with better results, because the heat is evenly and scalable.

Brownie Pops

Dear readers, good day! I am so glad to announce that today is my blog’s first anniversary! I can’t believe it, time certainly does fly when you are having fun! I would like to take this opportunity to thank all the readers of Seasaltwithfood for supporting and leaving many nice comments on my blog. Not to mentioned as well, many emails with wonderful ideas and encouragements. I appreciated the kindness and will certainly continue to share as much recipes possible. Thanks!

FYI: One of my readers have also been so kind to bring to my attention recently that a certain new blog based in the UK, http://www.recipeideas.org.uk/, have been blatantly plagiarizing contents from my blog. Shocking! So, do you reckon that is some form of recognition that I must be doing something right? What do you think? Should I be flattered or upset that someone has made such an effort to steal my postings? Anyway, I hope the owners’ of that blog will read this and have some dignity to stop ripping off my work. Very disgraceful, don't you think so?

Anyway, I was rather busy the past few weeks and did not plan for any celebration for my blog’s first anniversary. Then, my two lovely kids thought they will make something pretty and sweet for me. I decided to have them make these cute brownie pops. It’s easy and a fun little project in the kitchen for them. So, keep those ideas and comments coming. Enjoy the recipe.

Moong Dal Pancakes

Moong Dal Pancakes is a fantastic savory pancakes made out of split peas. They are rich in protein and can be eaten as it is or served with some chutney. Delish!

Ingredients

185 g (6 ½ oz) Moong Dal, picked over, washed and drained
85 to 100 ml Water
2.5 cm (1 inch) Ginger, peeled and coarsely chopped
2 Cloves Garlic, peeled
2 Green Chilies, chopped
1 tsp Sea Salt
1/2 tsp Ground Turmeric
50 g (2 oz) Onion, peeled and minced
2 Tbsp Finely chopped Fresh Coriander
¼ tsp Baking Powder
Vegetable Oil for frying

Method

Soak the dal with 1 liter of water for about 5 hours. Drain.

Combine the ginger, garlic, chilies, sea salt, turmeric, dal and 85 ml plus 1 Tbsp water and blend until you have a smooth batter. (Adjust the consistency with more water if necessary) Let the machine run for 2 to 3 minutes so the batter gets light and airy.

Empty the batter into a bowl. Add the onion, fresh coriander, and baking powder. Mix the batter well.

Brush a 20cm (8 inch) non-stick frying pan with about 1 tsp of the oil and set over a medium-low heat. When the oil is hot, ladle about 55 ml (2 fl oz) of batter in the center of the pan. Spread the batter with the back of a soup spoon. Using a gentle but continuous spiral motion spread the batter outwards. Make a pancake that is about 5 to 6 inches in diameter. Turn the pancake over and cook for another 1 ½ minutes or until lightly brown in color.

Make all the pancakes this way, making sure you stir the batter each time. These pancakes are best eaten hot, just as soon as they are made. You could, if you wish, stack them on a sheet of aluminum foil and then wrap them into a bundle.

The whole bundle can be heated in the oven at 220˚C/425˚F for 15 minutes.

Makes about 9 pancakes.

Pandan Sweet Cake with Glutinous Rice and Pandan Essence

picture of http://thaifood.about.com

This steamed rice cake is delicious and healthy - light in sugar, high in protein, and low in saturated fat. Like most desserts, this cake calls for sticky rice (also called "sweet rice") and heart-healthy coconut milk. Pandan is a green paste made from pandan leaves (a herb) - which makes it a nice dessert for party. This cake is delicious on its own, either served warm or at room temperature or cool. Or dress it up with fresh fruit and a little toasted coconut.

Ingredients:
1st LAYER:
  • 1 cup of glutinous rice (sticky rice) soaked in water for at least 30 minutes or up to 3 hours
  • 1 ¼ cups of thick coconut milk
  • ¾ tsp of pandan paste/essence
  • 2 tbsp of white or brown sugar
  • A pinch of salt
2nd LAYER:
  • 5 eggs
  • 1 ¼ of cups thick coconut milk
  • ½ cup of white or brown sugar
  • A pinch of salt
  • 2-3 drops of pandan paste/essence
  • 2 tbsp of rice flour
Methodes:
  1. Use a steamer for this cake if you have one. If not, you can assemble one by placing a bamboo steamer or large colander inside a wok or large pot (bamboo steamers work well and can be purchased very cheaply at Asian grocers). Then place a greased cake pan (9 inch) inside the steamer/colander. Make sure to put at least 1 inch of water in the bottom of your wok.
  2. If your cake pan takes up all the room in the steamer (as mine does), leave off the steamer lid. Instead, use the wok cover (or a very large frying pan cover). Make sure the cover is large enough to allow steam to pass from the bottom of the wok over the top of the cake. (To see what this looks like, click on the step-by-step version of this recipe above.)
  3. After soaking the rice (see ingredients), drain the rice and stir it together with the other "First Layer" ingredients. Mix well. Note: The pandan paste/essence will turn your batter green, and will also give your cake a nice flavor.
  4. Pour this mixture into the cake tin and even out the surface with a spoon. Then cover and allow to steam at high heat for 20 minutes. Be sure to add more water to the wok as needed.
  5. While first layer is steaming, prepare second layer. Beat the eggs with a fork for 30 seconds.
  6. Add the coconut milk, sugar, salt, and pandan paste. Lastly, sprinkle the flour over. Beat by hand or with an electric mixer until the batter is more or less smooth.
  7. The first layer is done when the rice has absorbed the liquid. When first layer is cooked, gently press down on it with a fork to even out the layer.
  8. Slowly pour the second layer mixture over the first layer. Now cover and reduce heat to medium. Continue steaming for another 20-30 min, or until the custard has set (an inserted fork should come out clean). Note: your cake tin can be filled up to the rim, as this cake does not rise very much.
  9. An optional step is to the underside of a greased spoon over the surface of the top layer as it is setting (allow it to develop a crust before you do this). If you do this several times, it will even out the layer and give the top a nice sheen.
  10. Allow cake to cool at least 10 minutes before cutting. Serve as is (it's delicious plain) or with a little fresh fruit and a sprinkling of toasted coconut.
  11. Step by step with picture

Tips and Trick

  • From America's Test Kitchen, it's better to overbeat the whites than to underbeat. Really stiff egg whites will give chiffon cakes better volume
  • From Beranbaum, using more whites than yolks help with the structure of the cake
  • Inverting the cake as soon as it's done and leaving it to cool for several hours in that position helps the cake to hold its shape
  • You must not grease your chiffon cake pan (and yes, you need a chiffon cake pan, don't ask me how I know) so that the cake will not fall
